Baked Guava Dessert

SERVES 6 – 8

125g butter or margarine, softened

250ml sugar

3 extra large eggs

375ml cake flour

15ml baking powder

Pinch of salt

250ml milk

1 X 410g can guava halves, drained and syrup reserved

180ml sugar

Cream butter and sugar until light and fluffy.  Add eggs and beat until creamy.  Sift flour, baking powder and salt together.  Add flour mixture and milk gradually to mixture.  Spoon into a greased ovenproof dish.  Arrange guavas on top.  Bake in a preheated oven at 180⁰C for 45 minutes or until a skewer comes out clean.  Fill reserved syrup up to 180ml with water.  Add 180ml sugar and boil for       5 – 10 minutes.  Pour over desert as it comes out of the oven.  Serve hot or cold with cream, custard or ice cream.
