Berry and Guava Coconut Crumble 

SERVES 4 – 6

2 X 410g can guava halves, drained but keep the syrup

125g frozen of fresh berries of your choice

60ml castor sugar

125ml cake flour

100g cold butter

250 ml coconut

Preheat oven to 180⁰C.  Remove pips from guavas and cut into quarters.

Mix with berries and reserved syrup.  Spoon into 4 greased ramekin dishes.

Mix castor sugar and flour together.  Rub butter into flour mixture with your fingertips until mixture resembles breadcrumbs.  Add coconut.  Crumble over guava mixture and bake in a preheated oven until golden – about 15 – 20 minutes.  Serve with cream or custard.
