GUAVA SYRUP KOEKSISTERS

Ingredients:

Koeksister dough

  • · 2 cups of flour
  • · 8g yeast
  • · 0.7 tsp salt
  • · ¾ cups of milk
  • · 4 tsp butter
  • · 2 tsp sugar
  • · Pinch of nutmeg
  • · 50g Pistachios
  • · 1 litre of oil for deep frying


Guava syrup:

  • · 6 cups of sugar
  • · 2 cups of water
  • · 1 ½ cups orange juice
  • · Orange peel
  • · Cinnamon
  • · Cardamom
  • · 10-12 guavas

Method:

Syrup:

  1. Peel guavas and remove pips. Cut into pieces. Peel orange.
  2. Sautee guavas and add sugar, cardamom, orange peel and cinnamon sticks.
  3. Once caramelized, add the water and orange juice
  4. Allow to rest and chill in the freezer
    Dough
  5. Mix flour, salt, nutmeg and sugar
  6. Slightly heat up the milk in a microwave and add yeast and melted butter
  7. Mix the ingredients together and knead till combined.
  8. Set aside the dough to rise
  9. Once risen, divide the dough into three strips per serving and plait
  10. Heat up oil in a small pot
  11. Put the dough in, submerging it in oil completely
  12. Fry until golden brown and immediately drench in chilled syrup
  13. Rest in syrup for about an hour and store in the fridge
  14. Meanwhile Slightly roast Pistachios
  15. Take koeksisters out of fridge and plate with pistachios
