Sweet Potatoes with Guavas 

SERVES 4 – 6

3 medium-sized red sweet potatoes, scrubbed and sliced 1cm thick

Salt to taste

250ml guava jam

50 g butter

A few fresh sage leaves

Arrange sweet potatoes, overlapping in an ovenproof dish.  Sprinkle with salt.  Heat jam and butter together.  Drizzle over sweet potatoes and bake in a preheated oven at 180⁰C for 45 minutes – 1 hour or until soft and golden.  Baste regularly with sauce.  Fry sage leaves in a little butter until crispy and scatter over the sweet potatoes.  Drizzle with the frying butter.
