Serves 4
8 canned guava halves
100 g sugar
150 ml water
60 g soft butter
125 g sugar
125 g self-raising flour
60 ml milk
2 eggs
40 g fine desiccated coconut
pinch of salt
To Serve: custard or crème fraîche
- Preheat oven to 200 ºC. Grease 4 teacups with butter.
- Drain the guava while you mix the batter, reserve the syrup.
- Cream the butter and sugar, add the remaining ingredients, and mix through.
- Spoon into the teacups and place half a guava in the centre of each. Place the cups on a smaller baking tin to make it easier to later take out of the oven. Bake for 15 – 20 minutes.
- Take out of the oven and pour the guava syrup over.
- Serve warm with custard, coconut flavoured yogurt or crème fraîche.
