Guava Atjar

MAKES 4 X 250ml

Ingredients:

500ml red wine vinegar

200ml sugar

2 onions, chopped

750g guavas, peeled and slices or 2 X 410g cans guava halves, drained and sliced

125g dried prunes, depipped and chopped

250ml seedless raisins

60 ml preserved ginger

5ml salt

2.5 ml cayenne pepper

Method:

Heat vinegar and sugar over low heat and stir until sugar dissolve.

Place remaining ingredients into a large plastic container.

Add vinegar and sugar mixture.

Cover container and allow to stand overnight.

Cook over moderate heat until mixture thickens.

Bottle while hot in sterilised bottles.

Seal immediately.
