Guava Curry
Serves 4
- 15 ml butter
- 75ml oil
- 750g cubed beef tossed in seasoned flour
- 2 onions, halved and sliced
- 2 cloves garlic, crushed
- 2 cm piece ginger, chopped
- 2 star anise
- 2 cardamom pods
- 1 bay leaf
- 2 ml ground cinnamon
- 2 ml ground cumin
- 20 ml mild curry powder
- 1 X425g can chopped peeled tomatoes
- 1 X 410g can guava halves
- 250ml peas
METHOD
Heat butter and 30ml of oil and brown the meat. Remove from saucepan and set aside. Heat remaining oil and sauté onions until soft. Add garlic and ginger and fry for 2 minutes. Add star anise, cardamom, bay leaf, cinnamon, cumin and curry powder and fry for 1 minute. Add meat, tomatoes and guavas. Simmer over low heat for 20 minutes. Add peas and heat through. Serve with Basmati rice, pompadoms or rotis, atjar and sambals.
