Ingredients:
- 1 X Rack of Lamb
- 1 X Red Onion
- 6 X Guavas
- ½ Cup of Red Wine
- 50g Tomato Paste
- 1 X Cup of Vinegar
- 1 X Cup of Sugar
- 15 ml Brandy
- 2 X Carrots
- 3 X Peppers
- Rosemary
- Garlic
- Chillies
- 1 Cup Mash
- Paprika
- Thyme
- Salt & Pepper
- Guava Puree
- Coriander
- Olive Oil
Method:
- Flambé 1½ guavas in brandy
- Chop up peppers, carrots & red onion
- Add olive oil. Red wine, tomato paste, guava puree with the veg in a bowl
- Add garlic & rosemary to the bowl
- Allow sauce to cook for 30 minutes
- Add rack of lamb and braise for another 20 minutes
- Make chutney by combining onion, vinegar, sugar, garlic & chillies. Reduce.
- Season to taste
- Add fresh coriander at the end.
- Add finely diced peppers with couscous.
