LINE FISH WITH GUAVA BARBEQUE SAUCE AND GUAVA AND MANGO SALSA

Serves 4-6

  • 30ml vegetable oil
  • 2 spring onions, finely chopped
  • 250ml guava juice
  • 60ml tomato paste
  • 60ml brown sugar
  • 2 whole star anise
  • 45ml soy sauce
  • 5ml ground cumin
  • 5ml Thai seven spice
  • Juice of half a lemon
  • 1kg line fish filleted

GUAVA BARBEQUE SAUCE:

Heat oil in a pan.  Add spring onions and cook until they become soft and golden.  Stir in guava juice, tomato paste, brown sugar, star anise, soy sauce, cumin, seven spice and lemon juice.  Simmer for about 5 minutes stirring occasionally.  Remove star anise and allow to cool.

LINE FISH:

Place oven rack in middle of oven.  Heat grill.  Line a baking sheet with aluminum foil and drizzle with olive oil.  Place fish fillets on baking sheet and brush with barbeque sauce.  Grill for 10 to 15 minutes or until fish is just cooked and golden.

Serve fish with the guava and mango salsa, lemon wedges and fresh coriander.
