SERVES 4
Ingredients:
200g organic mixed greens
125ml pomegranate seeds
4 guavas, quartered with the skin on or 1 X 410g can guava halves, drained
45ml extra virgin olive oil
45ml orange juice
Juice of 1 lemon or lime
1 spring onion, finely chopped
A 1cm piece of ginger, chopped
15ml honey
30ml chopped coriander
2.5ml curry powder
Method:
Place all ingredients except mixed greens and pomegranate seeds in a blender and blend until smooth.
Strain dressing through a sieve to remove guava pips.
Toss greens with dressing and scatter pomegranate seed over.
