Pan Seared Duck Breast with Sage and Sticky Pineapple 

SERVES 2

Ingredients:

2 duck breasts

180ml guava jam

30ml soy sauce

1 cm piece ginger, chopped

4 – 6 sage leaves, chopped

3 slices pineapple

Method:

Place duck on a baking tray and score with a sharp knife.

Season and bake in a preheated oven at 220⁰C for 15 – 20 minutes or until golden and skin crispy.

Heat jam, soy sauce and ginger together.

Add sage and pineapple slices and cook for 2 minutes.

Spoon over the duck breast and serve with stir fried green vegetables.
