Winter Fruit Salad With Guava 

SERVES 4 – 6

Ingredients:

250ml orange juice

Grated zest of 1 orange

2 sticks cinnamon

2 cardamom pods

2 star anise

125ml sugar

4 ripe guavas, peeled and sliced

2 pears, quartered

8 – 10 dried prunes, pips removed

Method:

Bring orange juice and zest to the boil in a large saucepan.

Add cinnamon sticks, cardamom, star anise and sugar.

Stir until sugar has dissolved.

Add guavas, pears and prunes.

Lower heat and simmer for 5 – 10 minutes until fruit is cooked and liquid syrupy.

Serve with mascarpone cheese, cream or custard.
